One of my son’s favorite foods… Chicken Nuggets! So when we headed down this food journey, I quickly scrambled to find a replacement for the nuggets that I quickly realized were not so healthy and FULL of a whole bunch of ingredients that I could barely pronounce and a few I had to google to figure out what they were!
On the Left some ingredients we decided our family wanted to stay away from…
modified food starch… textured soy flour… autolyzed yeast extract
to name a few…
Our option on the right is an improvement, with a much shorter ingredient list…good in a pinch but still room for improvement.
An even better OPTION for our family… MAKE OUR OWN!
For this batch pictured below we did a VERY simple coating…
1lb Organic Chicken Breast cut into bite size pieces
1 cup Brown Rice Flour
1/4 tsp Pink Himalayan Sea Salt
1/4 tsp organic pepper
optional 1 free range egg whisked for pre-dip
pan-fried in Safflower or Sunflower oil.
Here are the steps… easy enough for your kids to help out!
a few other coating we have tried….
crushed up organic rice cereal
OR
crushed up organic potato chips
OR
crushed up GF Bread Crumbs
the possibilities are endless… and waaaay more Healthy!
